SPANISH RICE with CHICKEN & CHICKPEAS (Arroz con Pollo y Garbanzo). Made this to prep some meals for my folks & for hubby’s lunches this week. Here’s what you’ll need:
2 cups brown jasmine rice (or your choice of rice)
2 chicken breast, cubed
1 can organic garbanzo beans
Small can of crushed tomatoes
1 small onion, diced
2 garlic cloves, minced
Turmeric
Spanish paprika
Italian seasoning
Cilantro, dried or fresh
Adobo seasoning
Salt/Pepper to taste
In a pot add some extra virgin olive oil. Sauté Chicken breast chinks, onions & garlic then add crushed tomatoes & continue to sauté. Add some turmeric & paprika to get the nice color on your rice. I know many people use sazon spice for coloring but I don’t because it has msg. Combining the paprika with turmeric does the trick & not to mention turmeric has so many benefits. Then add some Italian seasoning & dried cilantro. If you have adobo seasoning add that also. Then add your can of drained garbanzo beans. Add the rice & stir everything up. Then add enough water to cover the rice. Cook covered slowly until rice cooks. This is a simple meal that you can eat with beans or I just like it with an avocado. So good together.
