½ cup of dry quinoa
250 grams of ground turkey
1 tablespoon of olive oil
1/3 Cup shredded carrots
1/3 Cup of chopped red bell pepper
1 Cup of Broccoli
1 tablespoon Sriracha
3 tablespoons of low sodium chicken broth
Himalaya salt
Black pepper
Garlic powder
Cook the quinoa as per box instructions (1 cup of water per 1/2 of dry quinoa) set aside. In a big skillet at medium heat add the olive oil, red bell pepper, carrots, broccoli, salt, black pepper and garlic, cook for 1 minute. Toss the ground turkey, stir to separate the turkey while is cooking. Add the cooked quinoa, chicken broth and sriracha cook for 1 – 2 minutes and serve (2 servings).
