1 grilled chicken breast, cubed
2 mini bell peppers, diced
1 medium tomato, diced
2 tablespoons shredded red cabbage
3 strawberries, diced
2 stalks of hearts of palm, sliced thin
¼ cup whole grain brown rice
1½ tablespoons feta
¼ of an avocado, sliced thin
3-4 large lettuce leaves
Dressing of choice
Mix all ingredients together, except for the lettuce leaves and dressing. Spoon the salad into the lettuce cups and drizzle with the dressing of your choice.
