CHICKEN PANANG CURRY!

How about some homemade CHICKEN PANANG CURRY!😍😅
Here’s what you’ll need:
Coconut oil
Panang Curry Paste (homemade recipe below or store bought)
Chicken (I used 3 chicken breasts sliced)
1 can coconut milk
2 tablespoons fish sauce
2 tablespoons palm sugar (I used turbinado)
1 small bunch of basil leaves

Heat the coconut oil in a pan until hot. Add the Panang Curry Paste and cook until fragrant. Add the chicken and lower the heat. Heat until the chicken is just cooked through and add the coconut milk, fish sauce, and sugar. Let simmer. Add the basil and enjoy!

Panang Curry paste
2 tablespoons red curry paste
2 chopped chiles (I used jalepeno)
1 fresh lemongrass stalk sliced thinly, bottom 4” only with the tough outer layer removed
3 tablespoons roasted peanuts
1/2 onion, chopped
3 garlic cloves, chopped
1 tsp salt
1 tsp cumin
1 tsp coriander
1/2 teaspoon black pepper

Mix all of the ingredients in your food processor/blender until smooth.
