Blackened salmon with avocado and cilantro sauce

Protein:
1 salmon fillet
1 cup chopped spinach
1/2 cup quinoa
1tsp paprika
1/2 tsp lemon garlic seasoning
1/2 tsp oregano
Salt and Pepper

Sauce:
1 avocado
1/2 cup fresh cilantro
1 cup water
1 hefty tbs sour cream, low fat
2 tbs olive oil
1/2 small jalapeƱo
1 garlic clove
2 tbs lemon
Salt and pepper

Steam spinach and season with salt and pepper. Boil quinoa in water for about 15 minutes or until translucent. Season with salt and pepper. Season salmon with seasoning ingredients above. On a hot skillet with 1 tbs of oil, place salmon flesh side down and cook for 4 minutes. Flip and cook for another 6 minutes. In the meantime, add all sauce ingredients to a blender and blend until creamy. Plate spinach and quinoa and add fillet to top with avocado and cilantro sauce! You will have plenty sauce left over! Refrigerate and use it on other meals or sandwiches! Yum!!!
