Preheat oven to 425 degrees f. Cut avocado in half. Remove pit and scoop a bit of the avocado out, if needed to fill with your egg.
Set the avocados upright in a ramekins, then set the ramekins on a flat baking tray. Bake in preheated 425 degree oven for 15 minutes, or until the eggs are set the way you like them. Sea salt, pepper, maybe paprika to taste. Add your fav herbs or chives.
