4 oz grilled chicken
1/3 a cucumber, sliced
3 tomato slices
1 tablespoon grainy mustard
1/4 Hass avocado
2 slices red onion
1 handful arugula, spinach, kale mix
2 slices Ezekiel bread
Toast slices of bread. Meanwhile, sauté thinly sliced chicken breasts in coconut oil and garlic lovers seasoning. Set aside. Once semi-cooled (but still warm; steam from hot ingredients makes toast soggy and sandwich tends to fall apart!), begin assembling. On one slice, spread mustard; on other, spread smashed avocado. Assemble bread, slice and serve with a salad.
